Milkfish- smoked, fried, steamed, fermented and braised. Often stuffed, deboned, and butterflied. More commonly known as “bangus,” is the predominant fish species cultured in the Philippines. A staple in home kitchens served in varying forms and appears in tables from breakfast at posh restaurants to dinner in late night eateries.
Join us as we travel to Dagupan, the proud Bangus capital of the Philippines. We embark on a morning drive through the scenic Northern highway of Luzon to get to the coast. We were off to experience the process from farm to market, starting from large suspended open- water fish pens. To find out more about where these popular finned friends of ours come from, watch this!
